Ingredients:
- 20g water celery leaves picked from stems, very finely chopped
- 20g very finely chopped red onion
- 200g (2 large) tomatoes, finely chopped
- 4 umbellules (the subdivisions of the over all umbrella shaped arrangement of seeds, which is called an umbel) of green hogweed seeds, finely chopped
- 6 teaspoons lime juice
- 2 teaspoons vegetable oil
- Sea salt & a few grinds of black pepper
- Chilli powder
Method:
1. Simply combine the above ingredients and allow to sit for an hour or so before serving.
Use as a dip or as an accompaniment to beans (especially fried beans) or cooked meat (especially barbecued meat)
