Infusing vinegar with the seasonal notes of Meadowsweet flowers...

Truly there is no end to what you can use to infuse vinegars; and edible wildflowers are a perfect group to experiment with. At Forager we have big batches of this vinegar as well as the similarly wondrous elderflower vinegar, which we take the time to infuse whilst the flowers are out in the height of summer. Try it for yourself...

 

Ingredients:
- 15g Meadowsweet flowers
- 200ml cider vinegar.
Method:
1. Place flowers in a jar with cider vinegar and leave to infuse for at least a week before using in salad dressing and sauces or as a refreshing drink, adding a teaspoon or two to a glass of water.
